Happy Monday! I don't normally write to you on a monday, but here I am in your inbox anyways, because I wanted to share some apple recipes for you!

Here are 7 apple recipes worth making this season:

Apple Blueberry Crisp

The filling is warm and jammy, tucked beneath a buttery oat topping that turns crisp and golden in the oven. While the dark filling might lead you to believe this crisp is all about berries, it's actually the perfect balance of both fruits.

Apple Butter Pie

Made with store-bought apple butter as the base, plus a few eggs, cream, and spices, the filling couldn’t be easier to prepare. It make look like a pumpkin pie, but this one is all about the beautiful apple flavor.

Apple Turnovers

Perfectly cooked apples are lightly spiced with cinnamon and nutmeg then wrapped up in puff pastry and baked resulting in golden crisp Apple Turnovers that are finished with a cinnamon cider glaze.

Apple Pie Bars

These Apple Pie Bars are like an easier version of apple pie and a more portable version of a crisp. Plus, if you love crumble topping, you get twice as much with an abundant layer on both the top and bottom

Puff Pastry Apple Tart

This tart features three layers of apple flavor: a concentrated apple filling (using apple butter), thin slices of whole apple, and an apple glaze painted on after the tart has baked (though this is optional). This pastry manages to be both straightforward in its assembly while also packing powerful apple flavor.

A Scientifically Good Apple Pie

I literally wrote my thesis for my Science of Food class on a really good apple pie, one that anyone can make at home. This pie is something special, and I hope you make space for it on your baking list this season, maybe even for Thanksgiving.

Apple Tarte Tatin

Truly a timeless classic, this recipe features a flaky buttery puff pastry with juicy, tender caramelized apples. It is the ultimate Apple Tarte Tatin thanks to a few extra special techniques and ingredients.


What's Coming Up:

While Everyday Pie already has plenty of apple recipes, I’m finishing up a few new ones aimed at beginner pie bakers. One uses store-bought puff pastry to make a homemade apple pie with a real wow factor, and the other is an easy apple crisp pie (or apple crumble or Dutch apple pie, whichever name you prefer) that takes a lot of the guesswork out of making a traditional apple pie by using a few simple techniques. Both will be up this week, so stay tuned. I’m also updating a few older pumpkin recipes that are good, but with time I always find ways to make them even better.


We celebrated my daughter's birthday yesterday, which reminded me how quickly this fall season has flown by. If I'm being honest, my brain is still caught in the late days of August, the time right before my mom unexpectedly passed. Focusing on baking recently has been a small way to feel connected again...to the season, to my family, and as a connection to all of you who find comfort in the kitchen too. It means a lot to share this space with you, especially during seasons of change.
