Hello, happy friday!

Say it ain't so, but we're rounding the corner on the end of summer. Whether it already feels over to you or you're still holding on to the last few official weeks, it's coming. My kids head back to school after Labor Day, so I'm soaking up these final days with as much summer zest as I can.

The good news is that there's still plenty of fresh fruit and veggies available, which means there's still time to bake with the very best of summer’s bounty.

Here are 5 recipes worth making before summer ends:

Blue Ribbon Blueberry Pie

This pie is truly all about the blueberries, with very little interference from other flavors. A hint of orange complements and accentuates the blueberry, but doesn't overpower it, and a pinch of cinnamon adds a touch of nuanced warmth. It's baked inside a classic flaky pie crust that is crisp and buttery.

Perfect Peach Pie

This pie features a hint of almond extract to enhance the peach flavor and a pinch of nutmeg to add a touch of nuanced warmth. It's all baked inside a classic, flaky pie crust that is crisp and buttery.

Mascarpone Plum Pie

This pie was originally created to be a winter themed pie, but it's plum season now, which means it's the perfect time to make it! It has a creamy mascarpone filling with a hint of warm spices, swirled with a sweet sugar plum jam, all encased in a beautiful tart shell.

Spiced Blackberry Pie

After eating this Spiced Blackberry Pie for the first time, I wondered why I had waited so long to use the warm spices of fall for a berry pie. It's such an amazing combination!

Cherry Cream Cheese Pie

This creamy pie is a delicious hybrid of cheesecake and cherry pie, with layered textures and a perfect balance of flavors.

Also, I want to say, yes I've been on break from sending e-mails this summer, and no, I didn't tell you. But I'm back, and so will be my emails 😄 And if this is the first time you are receiving an e-mail from me and you don't know who I am, well at some point over the summer you signed up for the Everyday Pie newsletter, so hi and welcome!

Before I go, I wanted to share a few new ice cream recipes I published recently:

That's it from me. Hope you have a beautiful weekend, with lots of good things.

Kelli Avila January 23, 2026 Hi and Happy New Year! For some people, the start of the year revolves around gym memberships and fresh starts, but us bakers? And this year, I’m coming in with the energy that anything is possible. I’ve been a professional baker for...

Kelli Avila January 23, 2026 Hi and hello, this is my last e-mail of 2025! Today I’m thinking about pickies (and puff pastry). Pickies is what my grandmother used to call snacks served at a get together. She always wanted to make sure we had enough pickies, and I take that energy with me into every situation. Whether you’re hosting or just sitting around grazing your way into the new year, it's essential to have ALL of the pickies. And since it’s the stretch between major holidays, when most...
